Cooking With Love: Pumpkin Cake with Cream Cheese Frosting

This is a recipe that everyone loves so much that we have requests to make it year-round. Be sure to use room temperature cream cheese

Pumpkin Cake with Cream Cheese Frosting

2 Cups Sugar

1 Cup Oil

4 Eggs

2 Cups Canned Pumpkin

2 Cups Flour

½ Teaspoon Salt

2 Teaspoons Baking Soda

2 Teaspoons Baking Powder

2 Teaspoons Cinnamon

1 Cup Walnuts

 Cream sugar with oil; add eggs and canned pumpkin.  Add flour, salt, baking soda, baking powder, cinnamon, and walnuts.  Bake in a Jelly Roll Pan at 350o for 25 to 30 minutes.

Frosting:

1 Stick Butter, softened

8 Ounces Cream Cheese, softened

2 Tablespoons Vanilla

2 Cups Powdered Sugar

Mix ingredients until smooth.  Spread evenly over cooled cake.
