We saw Wolfgang Puck make a brined turkey on a Thanksgiving TV special in 2007 and wanted to lick the screen. It looked so juicy! We had never brined before that year and we were initially hesitant to deviate from our tradition (yet plain) turkey. Within a few bites, our guests declared this was the best turkey they ever ate! We have prepared this recipe every year since 2007 and the idea to change to a new brine is quickly dismissed by our family. In addition to the brine, the herb butter under the skin adds flavor and moistness. If the brine is too daunting or doesn't fit in your cooking timeline, at least try the herb butter. We do follow the directions for the turkey stock as the turkey cooks in the oven and also make extra stock a few days before because our family loads up on gravy.
